Great visits from both of you, Bill and Gary. Haven't bottled yet, but there's between 1 and 2 gallons from today. Thanks for the help and the artichokes and the company. There's worse things than being called defiant, and it might just fit anyway.

Thank you Matthew for inviting me over today to see how its done.  You have some great kids there that were a delight to be around and were a great help to you.  The process is time consuming but not so much as to take away the fun aspect. How many bottles did you process out today? It's a very fine hobby that pays off well in a good food item not normally found here in the Ozarks. Stop by anytime

We're open to an event, for sure. I invited the group twice last year and will continue to. I did have a couple stop in from another state. They were visiting their son who worked at Evangel. We usually do the first batch as just a family, and the other batches are more open.

I'm seeing an incredible amount of sugar maples around town. Won't be long.

Now is a great time of year to locate trees, gather equipment, and work on your arch (the place that you'll boil the sap to make syrup).

You can do all of these things in the dead of winter, it's just less fun.

 

Fall tapping is a practice that some use, but it's a bad idea to tap the same tree in both the fall and the spring.

 

If you're not fall tapping, be aware that "spring tapping" here in the Ozarks can occur as early as Christmas.
